I hope this message finds you well and at peace.

I am vegetarian in the Vedic understanding, I don't eat meat (including not eating fish) and I don't eat eggs. As far as I am able, I consume only organic milk products, following the principles of Ahimsa.

I understand that tamasic foods make the mind sluggish and indifferent. However, why is it that garlic, mushrooms, onions be considered tamasic, and not rajasic?

What is it about the properties of these foods that make them more like drugs, and meat in their effect on the body? How are they worse than rajasic foods such as chillies?

I really struggle to understand why onions, garlic and mushrooms are tamasic, whilst ginger, chillies and other spicy foods are only rajasic?

Please help me with this issue.
